11 Months With Lily!

It’s hard to believe Lily will be one year old in a month. It’s been a wild ride, but we have loved every minute! She has grown so much, especially in the last month, and it has been so fun to see!

Lily started crawling the day she turned 10 months old, and she hasn’t stopped since. I love seeing the personality she has gained through learning this new skill – she’s so much more content now that she can move on her own, and it’s adorable seeing her fascination with normal, everyday things!

A couple days after Lily learned how to crawl, we noticed a tooth making its debut right in the middle on the bottom! Teething has most certainly begun, but she’s a champ!  

Lily loves to eat, loves to snuggle, loves to babble, and it never ceases to bring a smile to our face. Nothing beats a messy-faced grin, warm baby cuddles, or her sweet little coos!

The most important thing Lily has learned recently is the fact that she’s going to be a big sister! Though she may not fully understand the implications that come with it yet, Nick and I are so so excited! Lily has been such a joy – a puzzle piece we never knew was missing in our lives – so growing our family is such a blessing to us!

I want to thank everyone for all the love you have poured out on Nick, Lily, and I. It takes a village to raise a child, and our village is the most loving, encouraging, and faithful village I know! ❤

9 Months With Lily!

Admittedly, Lily turned 9 months old almost two weeks ago and I’m just now getting around to posting. Whoops. That’s life with a baby!

Lily is seriously such a joy. Her smile is contagious, her laugh is adorable, and she loooooves to cuddle. Not to mention she never stops eating (though you wouldn’t know that by looking at her!). She still loves applesauce and has definitely come around to sweet potatoes, but I gotta say her favorite food is pork. Not exactly what I expected a 9 month old to like so much, but it is no doubt her favorite!

She hasn’t started crawling and no little teeth have made their debut yet, but she does thoroughly enjoy being on her belly and trying reeeeally hard to reach anything in front of her. Unfortunately this usually has the opposite effect – she ends up scooting backwards about 100% of the time. But it hasn’t affected her determination!

Her favorite things are Daddy, Bruno, music, splashing in the bathtub, and eating – honestly, what more could anyone ask for? All in all she is a ball of fun and we are thoroughly enjoying our little family!

Hearty Chicken & Jasmine Rice Soup

Chicken Noodle Soup is a versatile and delicious dinner, perfect on a snowy day like today, or as the go-to cure for any cold or flu. This recipe utilizes lemon and rice to provide a hearty and wholesome meal for everyone to enjoy.

 

Chicken & Jasmine Rice Soup

Prep Time: 15 minutes | Cook Time: 25 minutes | Total Time: 40 minutes
Serves: 4

Ingredients:

5 tablespoons olive oil, divided
1 – 1-1/2 pound boneless skinless chicken breasts, cut into 1/2 inch cubes
1-1/4 teaspoons salt, divided
1/8 teaspoon pepper
1/2 onion, diced
1 large carrot, peeled and sliced
1 stalk celery, sliced
2 cloves garlic, minced
1/4 teaspoons thyme
2 (32-ounce) containers chicken stock
1/2 cup rice
1 teaspoon parsley
1/2 lemon, juice of

Directions:

1) Heat large pot and 2 tablespoons olive oil over medium heat.

2) Place chicken in pot in single layer, sprinkle with 1/2 teaspoon salt and 1/8 teaspoon pepper, and cook until no longer pink on the inside.

3) Remove chicken with slotted spoon, leaving juices in pot.

4) Add remaining 3 tablespoons olive oil, and cook onions, carrots, celery, and garlic until onions are translucent but not yet browned, about 5 minutes. Mix in thyme and cook 30 seconds more.

5) Add chicken stock and turn up heat to medium high.

6) Once pot reaches boil, add rice, reduce heat to medium low, and simmer for 15 minutes.

7) After 15 minutes, check that rice is cooked thoroughly and add chicken back into pot.

8) Turn off heat, add parsley, 3/4 teaspoon salt, and lemon, and serve.

Chicken Strips with Aioli

Prep Time: 10 minutes | Cook Time: 15 minutes | Total Time: 25 minutes
Serves: 4

Ingredients:

6 tbs butter
3 cloves garlic, minced
1 1/4 cup panko breadcrumbs (unseasoned)
1/2 cup shredded parmesan
1 tbs parsley
1 1/2 tsp salt
1/4 tsp pepper
2 – 2 1/2 pounds boneless skinless chicken breasts
1/2 cup mayo
1/4 tsp garlic powder
1 tsp lemon juice
1/2 tsp parsley

Directions: 

1) Preheat oven to 400F and spray a baking sheet with nonstick cooking spray.

2) In a small saucepan, melt butter over medium low heat; as butter starts to melt, add minced garlic into the saucepan.

3) Once butter has melted, remove from heat.

4) In a bowl, combine panko, parmesan, parsley, salt, and pepper.

5) Cut breasts into 1 inch thick strips.

6) Coat chicken pieces in garlic butter, completely dredge in panko mixture, and place on prepared baking pan.

7) Sprinkle leftover panko mixture and drizzle leftover melted butter over chicken strips.

8) Bake in preheated oven for 15 to 20 minutes, or until internal temp reaches 165F or is no longer pink.

9) While chicken is baking, combine mayo, garlic powder, lemon juice, and parsley to make aioli.

10) Serve chicken alongside the aioli.

6 Months With Lily!

Our little girl turned 6 months old on Christmas Eve Eve, and we couldn’t be happier to spend every day with such a sweet baby! These last few months have brought so much joy and more love than we ever imagined to our lives, and we love watching her grow! Recently she has grown by leaps and bounds, showing her spunky personality and total fascination in everything (especially things that make a crunchy noise!). She loves oatmeal and applesauce, but could definitely live without sweet potatoes. She loves to roll, but doesn’t like getting stuck on her belly. She likes her pacifier, but prefers to chew on her hand instead. We are seeing her develop more and more everyday, and we absolutely love it! We are so looking forward to seeing her learn more in the weeks and months to come!
